The BIP 72 E intermediate proofer has been specially designed for the automatic fermentation of dough between rounding and elongation. Control of the introduction of the dough pieces into the bowls is achieved by means of a precision control. The dough pieces then pass row after row through the turning stations, according to the set fermentation time. The inter-fermenter works in tact or smoothly.
