There is no possibility for the operating staff to come into contact with the lye at any time! The lye circuit is fed from a swap tank. A suction pipe and a return hose are inserted into the swap body. After about 3000 pretzels, the lye is used up. The caustic solution is changed by simply replugging the suction pipe and drain hose into a new drum.
